Stirfry Karelas/Bitter Gourd or Melon

Ingredients: 2 medium-sized Karelas

1 medium-sized onion

1 tbls of raisins

1 tbls of cashew nuts

1 tbls of oil

1 tsp of 5 spices: mustard seeds, cumin seeds, fenugreek seeds, nigella, fennel

Preparation: Slice or peel the Karelas to lengthwise and soak in salted water for an hour

Heat oil and temper it with the 5 spices, add the sliced onions and fry for a couple of minutes

Squeeze out the water from the shredded Karelas and add to the onions

Add salt and cook at low heat for about 20 minutes

Add raisins and cashew nuts and cook till Karelas are tender

Eat with plain boiled rice or chapattis

For those on a diet skip the oil and tempering and add 1 tsp of fennel grains for flavoring along with the onions
